Drawing from time-honored wisdom passed down through generations, our recipes ensure you learn from the very best. Meet our expert chef, I Gusti Nyoman Agus Wiadnyana, the esteemed head of Dapur Usada and a revered figure in Balinese culinary culture.

Chef Agus was born and raised in a traditional family in Ubud, where the knowledge of herbs and healing food was passed down from generation to generation. From a young age, he learned how to use local plants and spices as natural remedies, deeply rooted in Balinese philosophy and wellness.

His journey continued in the culinary world, where he worked in respected kitchens and developed a mastery of both traditional and modern techniques. During his time at Pulau Kelapa Restaurant, he encountered Jamu, the traditional Javanese herbal medicine and immersed himself in learning its variety, benefits, and cultural significance.

Today, Chef Agus combines Balinese and Javanese herbal wisdom in a unique and accessible way. He is passionate about sharing these traditions with others, helping guests reconnect with nature and wellness through the timeless ritual of Jamu making.
